Dog Pumpkin Pancakes

Every so often Molly (queen bee, her royal highness, lofty princess....whichever name you prefer) decides she is over her food. She gets tired of it and just stops eating it.

She wants something else.

As the loving and trained human being that I am, I oblige because I wouldn't want to eat the same thing every day either.

This happened the other day and I happened to think....well, let's make some pumpkin pancakes because she LOVES pumpkin and it is November so it seems appropriate.

Here is my recipe that I originally found from http://burntapple.com/2016/09/29/dog-pumpkin-pancakes/ but tweaked a little to work for us.



Ingredients
  • 2 eggs
  • 4 tbsp water
  • 2 tsp oil
  • 8 tbsp canned pumpkin
  • 1/4-1/3 cup white flour
  • 1/2 tsp cinnamon
  • 1/2 tsp Baking Powder
  • Pinch of salt
I started with adding just 4 TBSP of flour, which is what the original recipe called for, but it was seriously so liquid like I couldn't flip the pancake. 
The pic on the left is the original 4 TBSP of flour, but then I added about 1/4 cup more and came up with a thicker consistency like on the right.

I had visited Michigan the week prior to this, and picked my very own apples, some of the were sooo small, they were hard to peel and eat, so I just chopped them up (without the core) and put them in the skillet with some cinnamon for Molly as a topper to her pancakes.


It turned out to be a very successful morning for her. I on the other hand had no time to eat so I stopped by McDonalds but you know, such is dog mom life. 

Make sure you give everything plenty of time to cool :)
